Spice up any Mexican meal with this simple rice side dish.

3 cups cooked rice
1 ½ cup Mozzarella cheese, shredded
1 cup sour cream or plain Greek yogurt)
1 4.5-ounce can green chiles, chopped
Salt, to taste
Heat oven to 400°F.
Mix all ingredients in a bowl until combined.
Spray a medium-sized baking dish with cooking spray. Spread rice mixture evenly throughout the dish.
Bake 25 minutes, or until rice starts to slightly brown on top.
