Winter Salad with Pomegranate Seeds

After all that heavy holiday eating, enjoy the complex flavors of this simple salad to start the new year off in a healthy (and delicious) way.

Pomegranate Seed Salad

Spinach or spring mix
Pomegranate seeds*
Feta cheese
Toasted walnuts

*To get fresh pomegranate seeds, cut the fruit in half and set in a bowl of cold water. After a few minutes, the seeds should be easy to pull out of the fruit.

Combine desired amount of ingredients into a bowl, and top with vinaigrette dressing.

Vinaigrette (serves 2-3 individual salads):
2 Tablespoons olive oil
1 Tablespoon balsamic vinegar
2 teaspoons honey
Salt and pepper to taste

Whisk together all ingredients in a small mixing bowl.
